Jorge Escandon is a culinary genius who creates extraordinary dishes from local ingredients in Cartagena, Colombia. Eleven years ago, Jorge followed his life passion for cooking and opened La Cevicheria, a quaint restaurant in the heart of the old city. The restaurant has become a huge success as the city has become a popular holiday destination for Colombians and international travelers.
Recently Anthony Bourdain visited La Cevicheria to try some of Jorge’s favorite dishes during an episode of No Reservations. Jorge said “I was nervous at first because Anthony is famous, however, after a few beers and conversation about food, my mind was put at ease”. Jorge and Anthony still communicate today and have become good friends.
I had the privilege to eat at La Cevicheria and speak with Jorge for a few hours about how he started cooking and about how he is living out his dream in life. Jorge said “Living the Dream to me means being yourself. If you believe in yourself, and you live your life with a strong force, success will come to you. That is the way dreams come true”
If you get a chance to visit Cartagena, you must visit La Cevicheria, and have a beer with Jorge. Who knows, he may even take you to the market, invite you on a boat and teach you how to cook at his home on a private island.
